Ingredients for 4 servings:

  • 2 eggs
  • 250 g spinach, frozen, thawed
  • 250 g grated cheese (Gouda or other type)
  • 200 g cream cheese with herbs
  • 400 g smoked salmon

Instructions

Working time approx. 15 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 15 minutes

Combine the eggs with the spinach. Spread the mixture evenly on a baking sheet lined with parchment paper. Sprinkle with grated Gouda and bake for 20 minutes at 200°C (top/bottom heat). Once the spinach omelet has cooled completely, spread with herb cream cheese and top with the salmon. Carefully roll up, wrap in aluminum foil, and refrigerate until ready to serve (ideally 8 hours). Serve sliced ​​as an appetizer or on a buffet.
