Ingredients for 4 servings:

  • 375 g spinach
  • 1 onion(s)
  • 40 g margarine
  • 40 g smoked bacon
  • 4 tbsp flour
  • 1 ¼ liters of broth or water
  • nutmeg
  • Salt
  • 4 tbsp cheese, grated or toasted breadcrumbs

Working time approx. 30 minutes; Total time approx. 30 minutes

Saxon cuisine

Roughly chop the spinach and onions and sauté in the margarine. Sweat the flour in the rendered bacon bits, gradually adding the broth or water. Simmer four-fifths of the spinach in the broth. Remove the soup from the heat and puree it and season with nutmeg and salt. Add the remaining finely chopped spinach and sprinkle each bowl with grated cheese or toasted breadcrumbs.
