Spinach strudel with feta

Ingredients for 2 servings:

  • 1 tbsp olive oil
  • 1 medium-sized onion(s), finely chopped
  • 1 clove(s) garlic, finely chopped
  • 500 g leaf spinach, roughly chopped
  • salt and pepper
  • oregano
  • 1 pack of strudel dough (shortcrust pastry)
  • 150 g feta cheese

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Heat olive oil in a pan and briefly fry the finely chopped onion and garlic clove (about 3 minutes). Then add the coarsely chopped spinach leaves and fry briefly. Add salt, pepper, and oregano. Remove from heat and let cool slightly. Cut the feta cheese into small cubes. Roll out the finished dough and top with the spinach and onion mixture and the feta cheese. Roll it up on a baking sheet lined with baking paper. Sprinkle with a little oregano. Place in the preheated oven and bake at 180°C (convection oven) for about 30 minutes, until the strudel is lightly browned. Serve with chive sauce and a green salad.
