Ingredients for 3 servings:

  • 450 g spinach, frozen
  • 2 eggs
  • 150 g flour
  • 200 ml milk
  • 2 garlic cloves
  • 100 g feta cheese
  • 1 tbsp olive oil
  • 30 g pine nuts
  • 30 g sesame seeds
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thaw the spinach. Whisk the eggs and add the flour and salt. Stir in enough milk to form a thin batter and let it rest for 10 minutes. Preheat the oven to 80 degrees Celsius. Finely chop the garlic and dice the feta. Heat olive oil in a pan and roast the garlic along with the pine nuts and sesame seeds. Add the spinach, heat through, and season generously with salt and pepper. Cook the batter into thin pancakes in a pan and keep them warm in the oven until they are all cooked. Spread the spinach and feta on top of the pancakes, carefully roll up the filled pancakes, and serve.
