Spinach with walnuts and honey

Ingredients for 4 servings:

  • 400 g leaf spinach
  • 1 onion(s)
  • 40 g butter
  • 60 g walnuts
  • 1 tbsp honey
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Side dish or filling e.g. for chicken breast

Briefly blanch the spinach leaves (without stems) in boiling salted water. Refresh in cold water. Finely chop the onion and fry in butter until translucent. Squeeze the spinach well, finely chop, and fry briefly until the remaining water has evaporated. Now stir in the chopped walnuts and a tablespoon of honey, and season with salt, pepper, and nutmeg. Besides serving as a side dish, I also love using this spinach mixture as a filling for stir-fries.
