Spirelli with thick zucchini sauce

Ingredients for 4 servings:

  • 350 g pasta (spirelli)
  • 3 zucchinis
  • ½ onion(s)
  • 4 tomatoes, peeled
  • basil
  • Parmesan, grated
  • olive oil
  • Pepper, whole
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Trim both ends of the zucchini, wash, and slice. Chop the onion, add it to a pan, and cook until translucent in 5 tablespoons of oil. Add the zucchini and cook until golden brown, stirring occasionally. Add the coarsely chopped tomatoes, salt, and plenty of freshly ground pepper to the zucchini. Let the sauce simmer for about 20 minutes, stirring, and adding a few tablespoons of hot water if necessary. Cook the pasta in plenty of boiling salted water until al dente, drain, and add the thickened zucchini sauce. Serve with grated Parmesan and chopped basil.
