Sponge dumpling soup

Ingredients for 4 servings:

  • 100 g butter, soft
  • ½ tsp salt
  • 1 pinch of nutmeg
  • 1 pinch of white pepper
  • 2 eggs
  • 100 g flour
  • 1 liter meat broth
  • 1 bunch of chives

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

In a tall, narrow mixing bowl, cream the soft butter with salt, nutmeg, and pepper until fluffy. Add the eggs and flour and beat with an electric mixer for another 2-3 minutes until creamy. Bring the meat broth to a boil and remove from the heat. Using a teaspoon dipped in the hot broth, scoop out dumplings from the butter-flour mixture. Let the dumplings simmer in the broth with the lid on for 10 minutes, but do not let them boil. Serve the soup and sprinkle with chives. Tip: Use the dumpling mixture as soon as possible, otherwise the dumplings won’t be fluffy.
