Spring chicken dumplings with wild herbs

Ingredients for 4 servings:

  • 400 g chicken breast fillet(s)
  • 1 handful of wild garlic
  • 1 handful of nettle leaves
  • 1 piece(s) ginger to taste
  • 1 large onion(s)
  • 2 garlic cloves
  • salt and pepper
  • Turmeric powder
  • 2 eggs
  • ¼ tsp cardamom powder
  • 1 pinch(s) coriander powder
  • 1 pinch of nutmeg
  • ½ tsp cumin powder
  • ½ tsp chili flakes or chili powder
  • n. B. Paprika powder, sweet
  • 2 tbsp oil, neutral, for the meatballs
  • n. B. Oil for frying
  • e.g. breadcrumbs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

can also be made with other vegetables and herbs, e.g. spinach or parsley

Mince the chicken breast fillet, wild garlic, nettles, onion, and garlic. Then add all the spices and knead with the eggs and some breadcrumbs. Mix in the neutral oil, rapeseed oil, or other oil to prevent the dumplings from becoming too dry. Form the dumplings and coat them again in breadcrumbs, then sprinkle with sweet paprika. Then fry in a pan with hot oil until browned and cooked through. I served them with potato wedges and paprika threads for garnish. Alternatively, pasta with grated goat cheese would also work.
