Ingredients for 4 servings:
- 1 kg pork (or minced meat)
- 500 g carrot(s)
- 6 onions
- 2 cloves garlic
- 1 tsp salt
- 1 tsp pepper
- ½ tbsp sugar
- 1 small jar of beans (mung beans)
- 2 eggs
- 100 g glass noodles
- 1 pkt. Dough sheets for spring rolls, frozen
- 1 iceberg lettuce
- Glutamate (if you like it)
- Oil (sunflower oil)
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Peel the carrots, peel the onions, and chop the pork (if not using minced meat) in a food processor. Grate the carrots finely, either by hand or with a food processor. Finely dice the onions or chop them in a food processor. Put everything in a large bowl. Chop the glass noodles (soak them first; see packaging) and add them. Add an egg, garlic, beans, and seasonings. Mix everything well. Remove the lettuce leaves whole and wash them. Place the thawed leaves (rectangular) diagonally (diamond-shaped) in front of you. Brush the edges with egg yolk. Place 1.5 tablespoons of the mixture in the center of the diamond-shaped shape. Fold the corner (the one facing you) over (so that the mixture is no longer visible). Fold the sides over and roll up. Make sure there isn’t too much air in the mixture, as otherwise it will sizzle. Seal with egg yolk. Fry the rolls in a pan (1/4 to 1/2 full of oil) until golden brown. Wrap the lettuce leaf around a pre-made spring roll, and you’re done. It tastes delicious with a sweet and sour sauce.
