Squid in tomato and red wine sauce

Ingredients for 4 servings:

  • 100 ml olive oil
  • 500 g squid(s), ready to cook, in 5 cm wide pieces
  • 1 onion(s), coarsely chopped
  • 200 g tomatoes, coarsely chopped
  • 2 cloves garlic, crushed
  • 1 red bell pepper(s), cut into small pieces
  • 1 bay leaf
  • 200 ml red wine
  • 100 ml fish stock

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Heat olive oil in a pan. Add the squid pieces and stir-fry for 1 minute. Add the onion and tomatoes and stir-fry for another 5 minutes. Stir in the garlic, bell pepper, bay leaf, red wine, and fish stock and simmer for 20 minutes. Serve hot.
