Squid with garlic

Ingredients for 4 servings:

  • 400 g squid(s), small (cleaned)
  • 2 cloves garlic
  • 2 spring onions
  • ½ bunch parsley, flat
  • 4 tbsp olive oil
  • 3 tbsp wine, white, dry
  • 1 tbsp vinegar (white wine vinegar)
  • Salt
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the cleaned squid and cut into 2 cm wide rings. Remove the tentacles from the head. Finely chop the peeled garlic cloves. Finely slice the spring onion. Chop the parsley. Sauté the garlic in the oil over low heat, then add the parsley and squid. Sauté for 1 minute, stirring, then add the wine, vinegar, and 3 tablespoons of water. Season with salt and a pinch of sugar and serve lukewarm with baguette. Note: It’s important that the squid only cook briefly over low heat. Otherwise, it will become tough as rubber.
