Squid with onions

Ingredients for 4 servings:

  • 500 g squid(s), gutted
  • 3 tbsp olive oil
  • 750 g onion(s)
  • 2 bay leaves
  • pepper
  • possibly salt
  • 1 tbsp paprika powder
  • 1 lemon(s), the juice
  • 2 tbsp parsley

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Cuttlefish with onion

Briefly rinse the squid under running water, pat dry, and cut into small pieces. Heat olive oil in a pan and sauté the squid. Peel the onion, quarter it, and cut it into sticks, then add it to the squid. Grate the bay leaves and add them to the squid along with the crushed garlic, about 1 tablespoon of paprika, and freshly ground pepper. Lightly season with salt. Cover and simmer for about 50-60 minutes at a low heat, adding water occasionally. Squeeze the lemon and season the sauce with lemon juice just before serving. Sprinkle coarsely chopped parsley over the squid and onion.
