Ingredients for 8 servings:
- 3 large onions
- 2 cloves garlic
- 6 tbsp oil
- 1 kg minced meat
- 1 gr. can/n sauerkraut, approx. 850 ml
- 1 small can of tomato paste
- 1 liter tomato juice
- 1 liter meat broth
- 8 gherkins
- 1 bunch of parsley
- 300 ml sour cream
- Paprika powder
- salt and pepper
- Caraway, ground
- Tabasco
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Dice the onions and garlic and sauté both in hot oil. Add the ground beef and fry thoroughly. Tear apart the sauerkraut and add it. Add the tomato paste, tomato juice, meat broth, and seasonings and bring to a boil. Simmer over low heat for about 30 minutes. Season the soup with Tabasco to taste. Thinly slice the cucumber and add it just before serving. Finely chop the parsley. Ladle the soup into bowls, top each serving with a dollop of sour cream and some chopped parsley.
