Steak and Guiness Pie with Green Beans Wrapped in Bacon and Tower Mash

For the filling

  • 5 Pc. Rumpsteak
  • 250 g Streaky bacon
  • 3 Pc. Onions
  • 3 Pc. Garlic cloves
  • 3 Pc. Carrots
  • 4 tbsp Worcester sauce
  • 1 tbsp Tomato paste
  • 1 liter Beer Guinness
  • 150 ml Beef broth
  • Olive oil
  • Salt and pepper

For the dough

  • 500 g Flour
  • 2 tbsp Water
  • 250 g Butter
  • Salt
  • 1 Pc. Egg

For the mash

  • Milk
  • 1 Pc. Egg
  • 1 bunch Chives
  • Salt

For the green beans

  • 400 g Green beans
  • 10 Pc. Breakfast bacon
  • 20 g Butter
  • 1 tbsp Garlic paste
  • Olive oil
  1. For the filling, the rump steaks are cut into 2 cm cubes. The olive oil is heated in a pan and the meat is seared in it, seasoned with salt and pepper. Also cut the streaky bacon into small cubes and fry together with the meat. Then remove the meat from the pan and stew the onions, garlic and carrots in the juice, which have been cleaned and chopped up beforehand. The tomato paste is added to the amount and mixed together. All the previous ingredients are now put in a roasting pan and deglazed with broth and Guiness. For the taste, add Worchester sauce and place in the oven for 3 hours at 160 degrees.
  2. Put the flour and butter in a bowl with the water and knead with your hands until a flaky dough is formed. Add a pinch of salt and then knead on the work surface into a lump of dough, which is wrapped in cling film and kept in the refrigerator for at least half an hour.
  3. Take the filling out of the oven and thicken with the cornstarch as desired. Now put the filling in separate molds. Dust some flour on the work surface and roll out the dough so that it is 3 mm thick. Use a mold to cut out circles with a diameter of 10 cm. Now place the circles of dough on the containers with the filling and let them overlap slightly at the edge. Whisk the egg and brush it onto the surface of the pies with a brush. Then put the finished pie in the oven for about 30 minutes at 170 degrees, until the dough is baked golden brown.
  4. For the mash, peel the potatoes, chop them up a little and cook the potatoes in salted water. Then add the warmed milk, butter and egg and mash the amount. Chop the onion and fry in a little oil until translucent. Chop the chives and add to the amount along with the onions. Season the whole thing with a little salt and nutmeg. Arrange with a serving wreath on the plate to form a “tower”.
  5. The ends of the green beans are cut off and washed under clean water. Then cook in salted water until al dente. Now turn the beans in a pan with melted butter and garlic paste. Make a bunch of around 8 beans and wrap with two slices of bacon. Then fry the packets in a little olive oil so that the bacon is crispy brown.
