Steak with chestnut and fig crust

Ingredients for 6 servings:

  • 6 beef steak(s)
  • salt and pepper
  • 20 ml vegetable oil
  • 2 tsp mustard
  • 20 g butter
  • 200 g chestnuts
  • 40 g almonds, peeled
  • 80 g fig(s), dried
  • 1 tsp sugar

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Season the beef steaks with salt and pepper and sear them on both sides in hot fat. Let them cool and then spread a thin layer of mustard on top. Lightly roast the almonds without fat until they begin to brown, then finely chop. Finely dice the figs and thinly slice the precooked chestnuts. Mix everything together and lightly fry in a pan with butter. Sprinkle with sugar and let it caramelize. Spread the mixture on the steaks. Braise in a hot oven at 160°C (top/bottom heat) for about 20 minutes, depending on the thickness of the steaks.
