Ingredients for 1 servings:

  • 150 g flour
  • ½ tsp baking powder
  • 1 pinch of salt
  • 2 egg yolks
  • 50 ml buttermilk
  • Flour for the work surface
  • Oil and coconut oil for frying
  • powdered sugar
  • Cinnamon

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Mix the flour with baking powder, salt, egg yolk, and buttermilk together until the dough is smooth (add a little more buttermilk if necessary, but the dough should have a slightly tough consistency). Let it rest for about 45 minutes, then roll out thinly (about 3 mm) on a well-floured surface and cut out 5 x 5 cm squares. Cut three times into these squares, each about 3 cm long, but do not cut through the square. Heat the oil and fat. Thread the squares onto a wooden spoon handle by lifting every second strip of dough, slide them into the fat, and bake on both sides until golden brown. Drain on kitchen paper and sprinkle generously with sugar and cinnamon.
