Strawberries with mascarpone cream

Ingredients for 4 servings:

  • 250 g mascarpone
  • 150 g ricotta
  • 50 ml milk
  • 1 vanilla pod(s)
  • 100 g sugar
  • 50 g biscuits (amaretti biscuits)
  • 4 tbsp Amaretto, non-alcoholic
  • 750 g strawberries

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Split the vanilla pod, scrape out the seeds, and mix well with the mascarpone, ricotta, milk, and 75g of sugar. Wash, hull, and slice the strawberries. Mix 250g of the berries with 25g of sugar and puree. Crumble the amaretti biscuits into 4 bowls or glasses and drizzle with 1 tablespoon of Amaretto. Mix the strawberries into the puree and divide between the bowls. Spoon the mascarpone cream over the strawberries and chill. Garnish with a strawberry and/or a lemon balm leaf before serving. Of course, you can also use Amaretto with alcohol.
