Strawberry cake with meringue

Ingredients for 1 servings:

  • 125 g butter
  • 200 g sugar
  • 2 packets of vanilla sugar
  • 4 eggs
  • 150 g flour
  • 2 tsp baking powder
  • 4 tbsp milk
  • 200 g powdered sugar
  • 500 g strawberries
  • 375 g low-fat curd cheese
  • 375 g mascarpone

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

Separate the eggs. Cream the butter with 125g of sugar and 1 sachet of vanilla sugar until fluffy, then stir in the egg yolks, one at a time. Mix the flour with the baking powder and stir in along with the milk. Grease a springform pan, dust the bottom with a little breadcrumbs, and pour in half of the batter. Beat the egg whites until stiff peaks form, stirring in the powdered sugar. Spread half of the meringue mixture onto the batter in the pan. Bake in a preheated oven at 175°C for 25-30 minutes. Bake a second layer using the remaining batter and beaten egg whites. Hull the strawberries and arrange slices on the first layer. Beat the quark with the mascarpone, 75g of sugar, and 1 sachet of vanilla sugar until smooth, then spread the cream over the berries. Place the second layer on top and chill the cake for about 1 hour before serving.
