Strawberry-chili jam

Ingredients for 9 servings:

  • 1,500 g strawberries
  • 1 lemon(s), juice
  • 2 tsp chili flakes, freshly ground
  • 500 g gelling sugar 3:1

Instructions

Working time approx. 20 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 28 minutes

Finely puree the strawberries. Add the gelling sugar and chili flakes and bring to a boil. Boil for 3 minutes, stirring occasionally. Fill the prepared jars to the brim. Screw on the lids. Check that all lids are vacuum-sealed. Tip: I always freeze the strawberry jam in the jars. This way, it retains its color beautifully and tastes just like freshly made.
