Ingredients for 4 servings:

  • 500 g strawberries
  • 2 eggs
  • Salt
  • 2 tbsp sugar
  • 3 tbsp Amaretto
  • 2 tbsp almond flakes
  • Fat, for the shape
  • Powdered sugar, for dusting

Sweet fruits hidden under a tipsy almond cream

Preheat the oven to 220°C. Grease a large ovenproof dish or four single-serve dishes. Wash the strawberries, drain them in a sieve, and hull them. Halve larger fruits if desired. Separate the eggs. Beat the egg whites with a pinch of salt until very stiff. Beat the egg yolks with the sugar until creamy. Stir in the Amaretto, then carefully fold in the beaten egg whites with a whisk. Arrange the strawberries in the baking dish or in the single-serve dishes and cover with the egg custard. Scatter the flaked almonds on top. Bake in the oven on the middle rack for about 12 minutes until golden brown. Dust the strawberry gratin with powdered sugar, if desired, and serve warm. Tip: Also delicious with peach or plum slices, mixed berries, or grapes.
