Strawberry Jam with Brandy and Tonka Bean

  • 1500 g Cleaned strawberries
  • 1 Lemon, the juice
  • 0,5 Tonka bean, grated
  • Brandy
  • 500 g Preserving sugar 1: 3
  1. Cut the strawberries into small pieces and put them in a saucepan, add the tonka bean zest and the lemon juice. Now add the glazed sugar and stir once and then let it steep for 2 hours. And now put a plate in the freezer for the gelling test.
  2. Be careful with the tonka bean. Half a bean is perfectly adequate for this amount of strawberries. The aroma of the tonka bean is very intense and this is still a strawberry jam and the dominant taste should be that of the strawberry. The tonka bean and the brandy should complement this taste harmoniously and discreetly.
  3. After the two hours, put the pot on the stove and bring it to the boil while stirring, let it boil for 4 minutes and then make the gelling test. If the plate was in the freezer, the sample should gel IMMEDIATtbspY. Now pull the pot off the stove and add brandy to taste.
  4. After a successful gelling test, fill the jam into sterilized twist-off jars, put the lid on it and store it upside down for 15 minutes. Then just label it and you’re done.
