Ingredients for 1 servings:
- 8 eggs
- 250 g sugar
- 2 packets of vanilla sugar
- 5 tbsp water
- 150 g flour
- 100 g cornstarch
- 1 packet of baking powder
- 2 lemons, organic
- 250 ml buttermilk
- 150 g sugar
- 8 sheets of gelatin
- 3 cups of cream
- 400 g strawberries
- 250 ml buttermilk
- 150 g sugar
- 8 sheets of gelatin
- 2 cups of cream
Instructions
Working time approx. 1 hour 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 4 hours 55 minutes
for a 28cm springform pan
For the sponge cake, separate the eggs and beat the egg whites with the vanilla sugar and half of the sugar until stiff peaks. Stir in the egg yolks with the water and the remaining sugar. Mix together the flour, cornstarch and baking powder. First sift half over the egg mixture and fold in, then the other half. Divide the batter evenly between two 28 cm springform pans. Bake in a preheated oven at 180°C (convection oven) for approx. 25 minutes. For the lemon curd, wash the lemons, zest them and squeeze the lemons. Mix together the lemon juice, lemon zest, sugar and buttermilk. Dissolve the gelatine according to the package instructions and mix with the buttermilk mixture and refrigerate. Meanwhile, whip the cream until stiff peaks, fold it into the cream and return it to the refrigerator. For the strawberry cream, puree the strawberries and mix with the buttermilk and sugar. Dissolve the gelatine according to the package instructions and mix with the mixture. Place the cream in the refrigerator. Meanwhile, whip the cream until stiff peaks. Fold the whipped cream into the custard and return it to the refrigerator. Cut each cooled layer in half. Spread half of the strawberry cream on the first layer. Place the second layer on top and spread with half of the lemon cream. Place the third layer on top and spread the second half of the strawberry cream on top. Place the last layer on top of the custard. Spread the remaining lemon cream over the top and around the edges of the cake and decorate as desired.
