Ingredients for 1 servings:

  • 200 g jacket potatoes
  • 50 g blue cheese (processed cheese)
  • 30 g cream
  • 20 g vegetable stock
  • 20 g apple juice
  • Salt and pepper, black, from the mill
  • Sage, dried
  • 1 onion(s), red
  • 1 apple, organic
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

In a bowl, combine the cream cheese, cream, broth, and apple juice. Microwave for 45 seconds at 800 watts. Remove from the oven, mix well, and season generously with salt, pepper, and sage. This amount of ingredients will make quite a bit of sauce in the finished casserole. If that’s too much for you, use only half the liquid ingredients (I later drizzled the delicious sauce from the dish over the potatoes on the plate). Preheat the oven to 180 degrees Celsius. Peel and dice the onion, and add it to the sauce. Core and finely dice the apple, and mix it into the sauce. Dice the peeled potatoes, fold them in, and transfer everything to a greased casserole dish. Bake the casserole for 20-25 minutes—cooking time may vary. Arrange on a plate, garnish, and serve.
