Strawberry-mango cake with meringue amaretti crumbs

Ingredients for 1 servings:

  • 175 g butter, soft
  • 3 eggs
  • 175 g sugar
  • 1 packet of Bourbon vanilla sugar
  • ½ small bottle(s) of bitter almond flavoring
  • 250 g flour
  • 1 packet of baking powder
  • 1 pinch of salt
  • 6 tbsp milk
  • 500 g strawberries, roughly diced
  • 1 mango(s), diced
  • some meringue(s)
  • some amaretti

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat oven to 180°C (conventional). Grease a rectangular baking pan (approx. 25×35 cm). Cream together butter, eggs, sugar, vanilla sugar, and bitter almond extract until fluffy. Combine flour, baking powder, and salt, and stir in with the milk. Spread batter into the baking pan. Sprinkle with strawberry and mango pieces and bake for about 30 minutes. Let the cake cool. Finely crumble or grind the meringues and amaretti biscuits to your liking and sprinkle over the cake. Serve immediately. Note: I came up with the idea of ​​using meringues and amaretti biscuits because I didn’t have any powdered sugar at home to dust the cake with. I’ve always done it this way ever since.
