Polish Kluski dumplings

Ingredients for 4 servings:

  • 12 m.-sized potatoes
  • e.g. potato flour
  • 1 egg yolk
  • salt water

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

First, boil the potatoes until tender. Then mash them in a bowl or, if you have them, press them through a ricer. Push a quarter to the side in the bowl. Into the now empty space (1/4), add the same amount of potato flour (1/4) (what was previously mashed potato). Add the reserved 1/4 of mashed potato to the rest. Finally, add the egg yolk and mix the mixture thoroughly. Once the mixture is homogeneous (not too sticky or dry), form dumplings from the mixture. If you like, you can also make a well for the sauce. Then carefully place the dumplings in (lightly simmering) salted water. When the dumplings float to the surface, turn off the heat and let them sit for another 3-5 minutes.
