Strawberry marzipan cake

Ingredients for 1 servings:

  • 4 eggs
  • 120 g sugar
  • 100 g flour
  • 20 g cocoa powder
  • 3 tsp baking powder
  • 100 g white chocolate coating
  • 5 sheets of white gelatin
  • 400 g strawberries (more if needed)
  • 500 g cream
  • 2 packets of vanilla sugar
  • 150 g jam (strawberry)
  • 1 package of marzipan (marzipan coating, e.g. from Schwartau)
  • Fat for the mold

For the sponge cake, separate the eggs. Beat the egg whites until stiff peaks are completely fat-free. Beat the egg yolks with the sugar until white and foamy. Mix the flour with the cocoa powder and baking powder and sift them on top. Then slide the beaten egg whites on top. Carefully but thoroughly fold everything together. Grease the bottom of a 26cm springform pan only, pour in the batter and smooth it down. Bake in a preheated oven at 175°C for about 30 minutes. After baking, turn out onto a wire rack after about 10 minutes to cool. Cut the cooled base in half horizontally. For the cream, soak the gelatine in cold water for about 10 minutes. Cut the chocolate coating and melt it in a bain-marie. Prepare the strawberries, wash them, drain them and slice them. Heat 5 tablespoons of the cream. Squeeze the gelatine into your hand and dissolve it in the gelatine. Whip the remaining cream with the vanilla sugar until stiff peaks are stiff. Then mix in the melted chocolate coating and dissolved gelatin, and finally fold in the strawberries. Place the bottom sponge layer on a cake plate, surround it with the cake rim (a springform pan rim should also work). Spread the cream on top and smooth it down. Cover with the top layer. Let the cake chill in the refrigerator for at least 2 hours before further use (the longer the better). Then carefully remove the cake rim and spread the strawberry jam over the surface of the cake. If necessary, cut the marzipan to size according to the package instructions and then place it on top of the cake. Now decorate as desired. You can use chocolate decorations or fresh fruit, or all of the above.
