Ingredients for 6 servings:
- 100 g margarine
- 150 g sugar
- 3 eggs
- 1 cup milk
- 2 cl cherry brandy
- 3 tbsp Flour, level
- 3 tbsp flour
- ½ pack of baking powder
- 100 g almonds, sliced
- ½ tsp cinnamon
- 1 tbsp cocoa powder, heaped (Kaba)
- 10 rolls (yeast milk rolls)
- 750 g cherries (sweet cherries)

Here I’d like to share a recipe for a cherry mousse that I got from a baker over 30 years ago. I’ve tweaked it slightly, making it lighter. Beat the margarine and sugar until very fluffy. Add the remaining ingredients and knead into a dough. Cut the yeast milk rolls lengthwise, then cut them into 2 cm slices and fold them into the batter. Fold in the cherries as well. Place in a 26-28 cm dish and bake at 175°C for 60-75 minutes.
