Strawberry muffins

Ingredients for 12 servings:

  • 250 g strawberries
  • 1 packet of vanilla sugar
  • 150 g margarine
  • 100 g brown sugar
  • 3 eggs, separate two of them
  • 200 g flour
  • 50 g oat flakes (melted flakes)
  • ½ pack of baking powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Place two paper baking cups in each well of the muffin tin. Wash the strawberries, remove the leaves, and then finely dice them. Sprinkle vanilla sugar over the strawberries. Beat the butter (or margarine) with the sugar until fluffy. Then add one whole egg and two egg yolks, and beat vigorously again. Beat the remaining egg whites until stiff peaks form and set aside. Mix the flour, baking powder, and instant flakes together, then stir into the batter a tablespoon at a time. Finally, carefully fold the beaten egg whites and strawberries into the batter. Pour the batter into the paper baking cups and bake in a preheated oven at 175°C (top and bottom heat) for about 25-30 minutes.
