Strawberry muffins with white chocolate

Ingredients for 1 servings:

  • 80 g butter
  • 100 g icing sugar
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 1 pinch of salt
  • 250 g flour
  • 300 g strawberries
  • 120 g white chocolate
  • 1 egg(s)
  • 200 ml buttermilk

Working time approx. 30 minutes; Total time approx. 30 minutes

Melt the butter. Mix the icing sugar with vanilla sugar, salt, flour, and baking powder. Hull, wash, and finely chop the strawberries. Roughly chop 100g of chocolate. Fold both into the flour mixture. Grease a muffin tin with some of the melted butter. Whisk the remaining butter with the egg and buttermilk and stir into the flour mixture. Pour the batter into the prepared baking cups. Bake in a preheated oven at 200°C for about 30 minutes until golden brown. Let the muffins cool and remove from the baking cups. Then chop the remaining chocolate and melt it in a warm water bath. Place the melted chocolate in a freezer bag, cut off a corner, and use it to decorate the muffins as desired.
