Ingredients for 4 servings:
- 100 g sugar
- 100 ml orange juice, freshly squeezed
- 2 tbsp balsamic vinegar
- 100 ml vegetable stock
- 4 tbsp olive oil
- salt and pepper
- 800 g strawberries
- 6 oranges
- 2 chili peppers
- 30 g walnuts
- 1 bunch of spring onions
- 1 ½ bunch basil
- 1 head of lettuce
Instructions

Caramelize the sugar in a small saucepan until light brown. Deglaze with orange juice, balsamic vinegar, and broth. Stir until the sugar is completely dissolved. Reduce the broth by half. Add 3 tablespoons of olive oil and let cool. Season with salt and pepper. Wash, hull, and quarter the strawberries. Fillet the orange and reserve the juice. Cut the chili into very fine, thin strips. Roughly chop the walnuts. Wash, trim, and slice the spring onions diagonally into 1 cm long strips. Heat the remaining olive oil in a pan and toast the walnuts, then remove them. Sauté the spring onions for 2-3 minutes, then remove them. Pick the basil leaves, tearing any larger leaves into small pieces. Mix all ingredients and let them stand for about 10 minutes. Arrange on top of the salad and serve soon. 395 kcal per serving.
