Ingredients for 1 servings:
- 200 g sugar
- 130 g butter
- 200 g flour
- 400 g strawberries (fresh or frozen)
- 150 g powdered sugar
- 2 egg yolks
- 1 egg white
- 40 g butter
- 20 g cornstarch (Mondamin, sieved, if necessary)
- 1 dashes lemon juice

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Strawberry Tart
Mix sugar, butter, and flour into a dough, wrap in cling film, and refrigerate for about 30 minutes. Then roll out thinly and place in a greased tart tin. Prick all over with a fork several times. Bake for about 30 minutes at 150°C fan oven. For the filling, puree the strawberries with a hand blender. Pour the mixture into a saucepan and sift in the icing sugar. Add the egg yolks and egg whites and stir vigorously. Simmer the mixture until thickened. (If the mixture doesn’t thicken properly, gradually sift in the Mondamin while stirring constantly until a thick mixture forms.) Melt the butter and add it. Finally, stir in a squeeze of lemon juice. Spread the mixture onto the pre-baked tart base and bake for another 30 minutes at 150°C fan oven until it has set somewhat. It will firm up even more as it cools.
