Strawberry Vanilla Cake

Ingredients for 1 servings:

  • 6 eggs
  • 240 g sugar
  • 6 tbsp oil
  • 250 g flour
  • 2 tsp baking powder
  • ½ pack of pudding powder (cream flavor)
  • 250 ml milk
  • 2 vanilla pods
  • 125 g low-fat curd cheese
  • 500 g strawberries
  • 400 ml cream
  • 50 g chocolate shavings
  • 1 tbsp powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 175°C (155°C fan-assisted oven). Beat the eggs with 200g of sugar until frothy, then stir in the oil. Mix the flour with the baking powder, sift it onto the egg foam, and knead into a smooth batter. Spread the batter onto a baking tray lined with baking paper and bake for about 25 minutes. Remove from the oven and let cool. Prepare the cream pudding with the remaining 40g of sugar and the milk, following the package instructions if necessary. Stir in the vanilla bean pulp. Let the pudding cool slightly, then stir in the quark. Wash the strawberries, remove the green parts, and halve them. Whip the cream until stiff peaks form. Spread the pudding over the base, arrange the strawberries on top, and pipe the cream between the strawberries. Garnish with chocolate shavings and powdered sugar.
