Soak the bread rolls in cold water and finely dice the onions. Mix the minced meat with the bread rolls, onions, and eggs. Season with salt, pepper, and freshly grated nutmeg. With wet hands, form about 12 meatballs. Heat the butter in a pan and fry the meatballs. Remove from the pan and keep warm. For the sauce, clean and wash the mushrooms and thinly slice them. Add them to the frying fat with the onion rings and sauté. Season with the cream, mustard, salt, pepper, and sugar. Cut the gherkins into fine strips and add them to the sauce, heating them up. This goes well with parsley potatoes or mashed potatoes and cucumber salad.
