Strudel with cherries and almond curd

Ingredients for 1 servings:

  • 500 g sour cherries, from the jar
  • 80 g almond(s), ground
  • 40 g almond(s), chopped
  • 750 g quark
  • 120 g sugar
  • 2 eggs
  • 2 rusks
  • 1 pack of strudel sheets
  • 25 g butter, melted

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Drain the cherries. Squeeze the quark in portions onto a kitchen towel. Separate the eggs, mix the quark with the sugar, almonds, and egg yolks. Beat the egg whites until stiff, then carefully fold in. Spread the strudel dough on a kitchen towel. Spread the quark lengthwise on one half of the dough, then the cherries on the other. Crumble the rusks and sprinkle them over the fruit. Roll up the strudel, starting with the cherry side. Brush the baking sheet with butter. Carefully place the strudel on top, brush with the remaining butter, and bake at 200°C for about 40 minutes.
