Strudel with yogurt and fruit

Ingredients for 1 servings:

  • 1 pack of dough (strudel dough, approx. 10 sheets)
  • 4 eggs
  • 170 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 200 ml oil
  • 500 g yogurt
  • 160 g flour
  • 1 packet of baking powder
  • 1.2 kg of fruit (e.g. cherries) of your choice and season
  • 200 g hazelnuts, grated

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

For the yogurt mixture, beat the eggs with sugar and vanilla sugar until frothy. Add salt, oil and yogurt. Set aside 5 tablespoons of the yogurt mixture to brush over the strudel later. Mix the flour with the baking powder and stir in. Wash, core, and chop the fruit (the type and amount of fruit can be adjusted as desired). Roll out two sheets of strudel dough and spread the yogurt mixture on top. Sprinkle with hazelnuts and arrange the prepared fruit (cherries are best). Roll into a strudel shape and place on a baking sheet lined with baking paper. Repeat this process until all the strudel dough sheets and the filling have been used up. This ingredient is enough for about 5 strudels. When all 5 strudels are lying side by side on the baking sheet, brush with the reserved yogurt mixture. Bake in a preheated oven at 180°C for about 35 minutes.
