Stuffed baked zucchini

Ingredients for 2 servings:

  • 2 thick zucchini
  • 1 bag of rice, pre-cooked, approx. 250 g
  • 75 g smoked ham
  • 100 g cheese, grated
  • ½ tube(s) tomato paste
  • 2 garlic cloves
  • 3 tbsp fried onions
  • 2 tbsp cream cheese
  • some oil
  • some salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

with smoked ham and fried onions

Cook the rice according to the package instructions. Wash the zucchini, discard the ends, and halve them lengthwise. Then hollow out the halves, place the zucchini flesh in a tall container, and puree with a hand blender. Place the zucchini halves in an oiled baking dish, season with salt, and drizzle with a little oil. Mix the zucchini puree with all the ingredients except the cheese and season with salt and pepper. Now fill the filling into the halves, or spread it around the outside if there’s too much. Sprinkle with cheese and bake in a preheated oven at 180°C for about 45 minutes. Serve as a main course for 2 people or as a side dish for 4 people.
