Stuffed bulgur peppers

Ingredients for 4 servings:

  • 4 pointed peppers
  • 80 g bulgur
  • 40 g olives
  • 200 g feta cheese
  • 2 tbsp Italian herbs
  • 3 cloves garlic
  • 5 tbsp olive oil
  • 1 shallot(s)
  • 400 g tomatoes, chopped
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Cut off the stems of the pointed peppers, remove the seeds, and rinse thoroughly. Prepare the bulgur according to the package instructions and then set aside. Crumble the feta cheese and place it in a bowl. Finely chop the olives and garlic and stir them into the bulgur along with the olive oil, feta cheese, and Italian herbs. Season with salt and pepper to taste. Fill the peppers with the prepared bulgur and place them in a baking dish. To prevent the peppers from burning, brush the dish with a little oil. Finely dice the shallot and fry in a pan with a little oil, then add the tomatoes. Season with salt and pepper and continue to simmer gently for about 3-4 minutes. Pour the tomatoes from the pan over the peppers and cook covered in the oven at 170°C for about 35 minutes.
