Stuffed Chicken Breast Fillet with Feta Cheese

Ingredients
 

  • 4 Halves Chicken breast fillet
  • 4 Discs Serrano ham, or of your choice
  • 200 g Crumbled Feta
  • 6 piece Dried tomatoes in oil
  • 1 Organic lemon, grated half lemon and 3 tablespoons. Lemon juice
  • 1 teaspoon Honey liquid
  • 1 Teaspoon (heaped) Parsley
  • Lemon and Herb Fleur de Sel
  • Tellicherry pepper
  • Sweet paprika
  • 1 bottle Rama Cremefine 15%
  • 200 Milliliters Chicken broth
  • 5 drops Piri Piri Chili Oil
  • 1 Teaspoon (level) Paprika-Spice-Cream
  • 1 Teaspoon (level) Clarified butter

Instructions
 

The filling

  • Finely chop the parsley and chives. Grate the lemon zest of half a lemon and squeeze out the lemon juice. Crumble the feta in a bowl. Drain the tomatoes, cut into pieces and add to the feta. Add the zest of lemon, parsley and chives and season with pepper. Mix three tablespoons of lemon juice with the honey and pour over the ingredients. Mix everything together well.

Filling & Co

  • Cut the chicken breast fillet into a bowl, cover with ham, add the filling, carefully fold over a little and secure with a roulade needle, toothpick or kitchen thread. The filling that remains is added to the sauce. 😉 Preheat the oven to 160 ° C hot air!
  • The filled chicken breast fillet with a little spice: Lemon and herb fleur de sel (remember that feta already contains plenty of salt;)), Tellicherry pepper and paprika.

Sauce & Co

  • Put the butter lard in a pan, heat up and sear the meat briefly on all sides and then place in a baking dish. Deglaze the pan with the chicken stock so that all the toasted aromas are absorbed. Add cremefine or cream, season with paprika-spice-cream (KB) and piri-piri-chili oil (KB), add the remaining filling to the sauce, mix everything well and season to taste.
  • Now pour the sauce over the meat and place the casserole dish in the preheated oven for 15 minutes. We had rice and a fresh salad that I could make in the meantime.
  • As soon as the meat is ready, it can be taken out of the oven, let rest for a few minutes before it is cut open and served.
