Stuffed cucumbers Bulgarian style

Ingredients for 4 servings:

  • 2 snake cucumbers (400 g each)
  • 400 g mettwurst (onion mettwurst)
  • 60 g bacon, finely diced
  • 2 small onions, finely diced
  • 60 g rice, cooked
  • 2 eggs, size M
  • 500 g natural yogurt
  • 3 tbsp tomato paste
  • 2 tbsp dill, freshly chopped
  • salt and pepper
  • some butter for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel and deseed the cucumbers. Cut each one lengthwise and crosswise. This will give you 8 cucumber pieces for filling. Mix the onion sausage with onions, bacon, eggs, and rice to form a sausage meat mixture. Mix the yogurt, tomato paste, and dill, season lightly, and pour into a suitably sized casserole dish. Fill the cucumbers with the sausage meat, place on top of the sauce, and cook in a preheated oven at 180°C (top/bottom heat) for about 20-25 minutes. Place the cooked cucumbers on plates, whisk or blender until smooth, and spread the sauce over the cucumbers. Freshly mashed potatoes go very well with this.
