Ingredients for 4 servings:
- 4 eggs, hard-boiled and halved
- 50 g Appenzeller Mostbröckli, alternatively Bündnerfleisch, finely chopped
- 50 g herb cream cheese
- 1 cucumber(s), finely diced pickle
- 1 onion(s), finely chopped
- 1 tbsp mustard
- 1 tbsp parsley, finely chopped
- some lemon juice
- Black pepper, freshly ground
- Capers, as desired
- Parsley, finely chopped, as desired
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Carefully separate the hard-boiled egg yolks from the egg halves and mix well with all the other ingredients, including the lemon juice. Season with pepper to taste. Spread the mixture over the egg whites and garnish with capers or parsley, if desired.
