Stuffed mushrooms

Ingredients for 3 servings:

  • 8 large mushrooms, approx. 10-15 cm
  • 500 g bacon
  • 200 g feta cheese
  • 2 balls of mozzarella
  • 1 pkt. cheese, grated
  • 2 large onions
  • chives
  • Parsley
  • salt and pepper
  • some oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Wash the mushrooms and carefully hollow out their skin. Chop the herbs. Finely dice the feta and mozzarella and add them to a bowl with the chopped herbs. Dice the bacon, onions, and leftover mushrooms (from hollowing them out) and fry them in a pan with a little oil (drain off any cooking liquid, otherwise the mushrooms will become very mushy). Then add everything to the bowl. Mix everything well. Season with salt and pepper as desired (be careful with the salt, as bacon can be salty). Stuff the mushrooms with this mixture and sprinkle generously with grated cheese. Bake in a casserole dish or on a baking sheet in a preheated oven (around 200°C) for 10-15 minutes, until the cheese forms a beautiful, dark golden crust. We serve the mushrooms with crispy fries. They also go well with delicious fried potatoes or simply rice.
