Ingredients for 2 servings:

  • 4 eggs
  • 5 jacket potatoes, from the previous day
  • 125 g bacon, diced
  • 1 medium-sized onion(s), chopped
  • 2 m.-large mushrooms, sliced
  • 5 cherry tomatoes, cut into small cubes
  • chives
  • salt and pepper
  • 1 pinch of marjoram
  • vegetable oil
  • 1 slice(s) Leberkäse , cut into cubes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Farmer’s breakfast

Whisk the eggs with salt and pepper. Peel the potatoes and cut them into small cubes. Heat vegetable oil in a large pan and fry the potatoes on all sides. Add the bacon, meatloaf, mushrooms, and diced onion and fry. Arrange the cherry tomatoes on top and season with salt, pepper, and marjoram. Pour the eggs over the potatoes and sprinkle with chives. Cover the pan and let the eggs set.
