Stuffed peppers

Ingredients for 4 servings:

  • 4 red bell peppers
  • 300 g minced meat, mixed
  • 2 large eggs
  • 1 onion(s), chopped
  • Salt
  • pepper
  • 100 g mozzarella, sliced
  • basil
  • possibly breadcrumbs (or Parmesan) to thicken

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the peppers and halve them lengthwise, removing the seeds and skins. Mix the ground meat with the eggs, salt, pepper, and basil to form a dough. The consistency may vary depending on the size of the eggs (it should be slightly softer than for meatballs). Thicken the dough with breadcrumbs or grated Parmesan cheese if desired. Fill the peppers with the dough, top with mozzarella slices, and place in a baking dish. Bake for about 45 minutes in a preheated oven at 200°C. The cheese should begin to brown slightly. Serve immediately. Tip: If you prefer the peppers softer, place them in the oven without cheese for about 15 minutes and then top with the mozzarella. Continue baking as described above.
