Ingredients for 2 servings:
- 500 g pork fillet(s), in one piece
- 250 g Edam cheese, grated
- 1 onion(s)
- 1 garlic clove(s)
- salt and pepper
- 200g bacon
- 1 sweet potato(s)
- Nutmeg, freshly grated
- 4 tbsp milk
- 30 g butter
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
For the filling, finely chop the onion and garlic. Mix together the cheese, salt, and pepper. Cut the pork fillets lengthwise, but do not cut all the way through. Stuff the pork fillet with the cheese mixture. Press the pork fillets into shape, wrap them in bacon, and brush with olive oil. Place in a baking dish and roast in a preheated oven at 175°C for about 30 minutes. Heat the meat to an internal temperature of about 60°C. Remove from the oven and let rest for 10 minutes. For the sweet potato mash, peel the sweet potatoes and roughly chop them into pieces. Cover and cook in boiling salted water for 20-25 minutes. Then drain and let steam briefly in an uncovered pot over low heat. In another pot, briefly boil the milk, butter, a little salt, and seasoning. Mash the sweet potatoes finely in a pot using a potato ricer or a potato masher. Whisk in the still-hot milk mixture until a light and creamy mashed potato is formed. In this order, everything should be finished at the same time.
