Stuffed zucchini with bulgur

Ingredients for 2 servings:

  • 2 zucchini, organic
  • 150 g bulgur
  • 1 onion(s)
  • 100 g lean ham
  • 10 tomatoes, dried in oil, with oregano
  • 1 tbsp tomato paste
  • salt and pepper
  • Thyme
  • some olive oil
  • Cheese, grated, low-fat, for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

First, wash the zucchini, cut it lengthwise, and scoop out the insides with a spoon. Place the zucchini on a baking sheet, season with salt, pepper, and thyme, and drizzle with olive oil. Bake in the oven at 200°C for 10 minutes. Prepare the bulgur according to the package instructions. Place the zucchini insides, ham, tomatoes, and onion into a bowl. Mix the bulgur with the ingredients and season with salt, pepper, and thyme. Now fill the zucchini with the mixture, sprinkle with cheese, and return to the oven for another 10 minutes.
