Bulgur-feta-zucchini pan

Ingredients for 4 servings:

  • n. B. Oil for frying
  • 500 g minced meat
  • 1 kg zucchini
  • 1 small bell pepper(s), red
  • 1 small bell pepper(s), yellow
  • 150 g bulgur
  • 300 ml water
  • 2 tsp vegetable stock powder
  • 250 g feta cheese
  • salt and pepper
  • oregano
  • n. E. Salad herbs, optional
  • n. B. BBQ spice mix, optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Heat oil in a large pan. Brown the minced meat until crumbly, then remove and set aside. Thinly slice the zucchini, halving or quartering depending on their size. Clean and roughly dice the bell peppers. Brown both in the pan. Meanwhile, heat the water for the bulgur, dissolve the vegetable stock powder in it, and cook the bulgur until tender. Once the vegetables are nicely roasted, add the minced meat and bulgur. Finely dice the feta, add it, and melt over low heat while stirring. Season to taste with salt, pepper, and oregano. Optionally, add dried salad herbs and barbecue seasoning to taste.
