Ingredients for 4 servings:
- 4 zucchini
- 8 slices of bacon
- 1 small onion(s)
- 2 bell peppers
- 500 g minced meat
- 1 pack of grated cheese
- Thyme
- oregano
- salt and pepper
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes
Preheat the oven to 180°C fan-assisted oven or 200°C conventional oven. Wash the zucchini and cut into four pieces, depending on their length, hollow out the insides and season with salt and pepper. Wrap the bacon around the bottom of the zucchini. Next, cut the onion and bell pepper into bite-sized pieces. Put the minced meat in a bowl, season well with salt, pepper and thyme or oregano and then mix with the onion and bell pepper. Finally, fill the zucchini with the minced meat, onion and bell pepper filling and sprinkle with the grated cheese. Now put the zucchini in the oven for 30-40 minutes. If the zucchini is thinner, it may be ready sooner. Tip: If you want it a bit spicier, mix a few chili peppers into the minced meat.
