Ingredients for 4 servings:

  • 200 g flour
  • 50 g ground almonds
  • ½ tsp salt
  • 50 g cane sugar
  • 10 g yeast
  • 1 dl milk
  • 125 g mascarpone
  • 300 g berries, mixed, any varieties
  • 150g mozzarella
  • 40 g cane sugar
  • 1 packet of vanilla sugar
  • butter

Working time approx. 20 minutes; Rest time approx. 1 day 16 hours; Total time approx. 1 day 16 hours 20 minutes

Place the flour, almonds, salt, and brown sugar in a bowl and make a well in the center. Crumble the yeast into the well. Add the milk and knead until a smooth dough forms. Let the dough rise in a warm place until it has doubled in size. Grease four round baking sheets (15-18 cm in diameter) with butter. Divide the dough into quarters and roll each one out to the size of the baking sheet, leaving a slightly thicker edge. Preheat the oven to 220°C. Place the dough on the baking sheets and bake on the lowest rack for 8-10 minutes. Spread the mascarpone cheese on the dough bases, leaving a 2 cm border free. Halve the strawberries and arrange them on the pizzas along with the remaining berries. Finely slice the mozzarella and scatter over the berries. Mix the brown sugar and vanilla sugar and sprinkle over the mozzarella. Bake at 220°C for another 10-15 minutes.
