Summer couscous with strawberries

Ingredients for 4 servings:

  • 500 ml orange juice
  • 250 g couscous
  • 300 g strawberries
  • some yogurt
  • 1 handful of almond flakes
  • 1 handful of mint, fresh
  • some cinnamon
  • some salt
  • 1 handful of raisins

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Toast the flaked almonds in a dry pan until golden brown. Transfer to a bowl and set aside. Briefly bring the couscous and orange juice to a boil, then let it simmer until the couscous has absorbed all the juice. Season with salt and cinnamon to taste. Wash and dice the strawberries and scatter them over the couscous. Finely chop the mint and scatter it over the couscous, then garnish with the flaked almonds and raisins. Add a spoonful of yogurt for topping.
