Summer Fruit Cake with Sprinkles

The perfect summer fruit cake with sprinkles recipe with a picture and simple step-by-step instructions.

  • 150 g Sugar
  • 100 g Butter
  • 2 piece Eggs
  • 75 g Wheat flour
  • 75 g Spelled flour
  • 0,5 teaspoon Baking powder
  • 150 g Creme fraiche Cheese
  • Fruit to your heart’s content …
  • 0,5 Banana
  • 2 piece Nectarines
  • 4 piece Plums
  • 10 piece Grapes
  • For the sprinkles
  • 150 g Butter
  • 170 g Flour
  • 40 g Ground almonds
  • 120 g Sugar
  • 1 pinch Salt
  • 1 teaspoon Ground cinnamon
  1. In the summertime when the weather is hot, you can stretch right up and touch the sky…. Summer holidays that start off really well. Namely with good weather and a catchy tune that suits the weather. It’s such a thing with catchy tunes … somehow the catchy tune seems to choose you and not the other way around. Can be pretty stupid and embarrassing when it comes to “Santa Maria” by Roland Kaiser. (Yes, I am speaking from my own experience.)
  2. When the weather’s fine, You got women, you got women on your mind… thank you, Mungo Jerry, You made my day! So, with music in your heart, summer reads in your hand, the laughing sun that makes you sweat on the lounger (finally bought) and a latte within reach, it just has to be a good day. Have a drink, have a drive, go out and see what you can find
  3. During a short cooling phase in the kitchen (fresh coffee!) And looking at the fruit bowl, I have a vision: fruit cake! Best of all right now. Right away!! Ok … it’s not just the sun to blame for this vision. I can explain This morning I was armed with my camera in my favorite neighbor’s kitchen and was allowed to look over his shoulder while he was baking his legendary apple pie and lick the dough out !!! Delicious! The recipe will follow shortly. Promised. Sing along with us, Dee dee dee-dee dee, Dah dah dah-dah dah, Yeah we’re hap-happy dah dah-dah, Dee-dah-do dee-dah-do dah-do-dah, dah-do -dah-dah-dah, dah-dah-dah do-dah-dah Now the fruit cake:
  4. Mix the soft butter and sugar until foamy, fold in the eggs, mix the flour and baking powder and stir well sifted into the mixture. Finally add the crème fraîche. Put the dough in a greased, sugared tin and cover with fruit to your heart’s content. Bake at 175 degrees for about 45 minutes.
  5. Bring the butter to the boil briefly for the crumble. Yes, you read that right. Mix the dry ingredients and pour the liquid, hot butter over them and mix everything briefly. These crumbles taste incredibly good even before baking.
  6. I bake them separately on baking paper (180 degrees 10 minutes) and then place them on the finished cake. Tastes warm and cold. If you like, you can add a ball of vanilla ice cream (I would have done it, but in the absence of it it had to go … went very well!)
  7. I’m now with cake, reading, coffee AND catchy tunes on the lounger … Chh chh-chh, uh, Chh chh-chh, uh Chh chh-chh, uh, Chh chh-chh, uh, Chh chh- chh, uh, Chh chh-chh, uh (These aren’t sleep noises, that’s text!)
